A Vegetarian St. Patty's Day!


Don't be upset you're missing out on the corned beef for St. Patty's Day...
try this delicious substitute made from red kidney beans! 


INGREDIENTS:

1 can red kidney beans, drained
1 can dark red kidney beans, drained
1/2 medium onion, roughly chopped
3/4 head garlic, roughly chopped
1 egg
1 cup stuffing, crushed
1 tbs. ground mustard
1/2 tbs. ground cumin 
1 tps. salt 
1tbs. pepper (add more to taste)

Keeping stuffing aside, mix all ingredients with an emerison blender or in a food processor. 
Fold in stuffing, add more if constancy is still runny.
Ball, fry and enjoy! 

Potatoes are simply pan roasted in the oven with evoo, salt and garlic powder.
